Between the Camelback Road anchors, the Waterfront, and a run of Stetson Drive second-floor rooms, Old Town has quietly compressed into a walkable rooftop corridor. For residents inside that rectangle, August is the month to test it, because September is when everyone else figures it out.

The Thesis, Stated Plainly

Six new concepts are landing inside a walkable rectangle bounded by Scottsdale Road, Camelback, Stetson Drive, and Third Avenue, and four of them are on second floors or higher. If you live within a short walk of Scottsdale Road, that geography matters more than any single menu. The neighborhood is compressing into a rooftop-forward evening corridor, and the practical consequence is that for the first time in years, a summer night in Old Town can be planned entirely on foot.

That is the shift. Not that Old Town has new restaurants. That the new ones sit close enough together to change how an evening gets built.

Read the geography before the menus. The rooms cluster within a fifteen-minute perimeter that a resident can cover in loafers.

Above All Else is taking the second floor of the space formerly occupied by STK at 7134 E. Stetson Drive. Austin Walter, CEO of Above All Hospitality, has been open about the design brief: a lot of diners are looking for that Instagrammable wow factor when they go out, and the concept is built around rooftop views and modern American plates with cocktails to match. A late-July opening means August and September are the window to become one. Translation: you have roughly eight weeks before the room stops taking walk-ins on a Thursday.

Wolf By Vanderpump, Because December Already Answered The Question

The December debut cleared the biggest doubt about the corridor. Wolf by Vanderpump is already open on the seventh floor of Caesars Republic Scottsdale, 6,500 square feet of rooftop space with a dramatic central bar and a globally inspired menu that extends to an eighth-floor veranda. The December opening drew national coverage and confirmed something that the Camelback corridor openings also suggest: Scottsdale is no longer the market where national concepts test a cautious second location. It's where they bring the flagship version. By August the crowd has settled, which is exactly when it becomes livable for a Tuesday.

Cielito, For The Old Town Rooftop Problem

Old Town has always had a rooftop problem: the views are excellent, the execution is inconsistent. Cielito is the room built to answer it. Cielito opens in February 2026 in Old Town Scottsdale and is a rooftop restaurant and bar atop the new AC Hotel Scottsdale Old Town. TWG, an ethnic research and design consultancy, developed Cielito from the ground up. Led by anthropologist and concept strategist Alex Webb and award-winning chef and creative director Shon Foster, TWG created a concept rooted in how people will eat, drink, and spend their night out. Six months in is the sweet spot for a rooftop to have found its service rhythm.

Din Tai Fung, But Only At An Off Hour

Din Tai Fung at Scottsdale Fashion Square is officially opening in April 2026, and the renderings look awesome. The 10,000-square-foot space will seat 340 guests and feature their signature dumpling expo kitchen where you can watch the xiao long bao magic happen. Four months in, the wait is still a wait. Din Tai Fung's arrival at Scottsdale Fashion Square has been widely regarded as the most anticipated restaurant opening in Arizona, attracting diners from throughout the Valley. Residents get an advantage here that visitors do not: an 11:15 a.m. walk-in on a weekday.

The One To Delay

Skip Drake's on the first two weekends. A valet-only entrance on Scottsdale Road at First Street during a national-brand debut is the definition of a room to visit on a Wednesday in month two.

The design tells you what the debut will feel like. Drake's Hollywood is moving into the former Buca di Beppo at 3828 N. Scottsdale Road. The 8,000-square-foot restaurant will be outfitted with decor that nods to old Hollywood glamour, including red leather booths and Art Deco chandeliers. The restaurant and bar is anticipated to open in 2026 on Scottsdale Road and First Street. This will be the fourth U.S. location of Drake's, joining outposts in Dallas, Houston and West Hollywood. A fourth-city debut with valet on a corner that already backs up on Friday nights is a room to walk past in August and enter in October.

The BOA Question

BOA has the highest kitchen credential of the group, which is why it belongs on any resident's radar even before opening. For Innovative Dining Group, this is a homecoming, they operated Sushi Roku at W Scottsdale for fifteen years before stepping back. BOA's Scottsdale kitchen will be led by Executive Chef Brendan Collins, whose resume includes Michelin-starred kitchens in London and a run of acclaimed Los Angeles restaurants. The Scottsdale location will also be the first in Arizona to feature a partnership with Four Sixes Ranch, the Texas operation widely recognized through its presence in Yellowstone, with a signature 18-ounce dry-aged ribeye from the ranch anchoring the menu. The 6,925-square-foot space will seat 210 guests with a waterfront patio, plus they're working on unique Scottsdale menu items and cocktails. Executive chef Brendan Collins is creating a seed-oil-free menu featuring 40-day dry-aged steaks, A5 Japanese wagyu, and even a "Beyond Steak Filet" vegan option. The waterfront patio is the item to note. It puts a second walkable anchor two blocks off Camelback.

The Two Weekends That Will Bend Traffic

August is not a quiet month on the Old Town calendar, and the two events that will shift where you can park and what you can book are worth marking now.

Weekend of August 6 to 9. U.S. Gymnastics Championships run Aug 6–9. This is a rare chance to watch future Olympians compete up close. Just think: you can say you saw them perform when they ascend the podium in Los Angeles in Summer 2028. Expect the corridor's reservation books to tighten Thursday through Sunday.

Saturday, August 29. Night Trip Festival Arizona runs August 29 from 6:00 PM to 2:00 AM at WestWorld of Scottsdale, bringing deep house, tech house, and techno DJs to the desert night sky for a full-scale music festival experience. That is a WestWorld night, not an Old Town night. If you live in the walking rectangle, that is the Saturday to stay in it.

The Rest Of The August Calendar Worth Keeping

Two smaller anchors round out the month for residents who prefer their evenings quieter.

Shemer Art Center's annual "Inside Perspective" Exhibition runs July 15 through August 27, 2026 and features 109 works of art by 58 students, instructors and team members. A weekday visit is a legitimate answer to the question of what to do at 5 p.m. when it is still 108 degrees outside.

For the pool-day crowd, the W Scottsdale WET Deck is running back-to-back weekend programming through Labor Day, and the resort has confirmed its Anchored at W Scottsdale Labor Day Weekend Celebration from September 4 through 7. August is the ramp.

A Small Detour Worth Noting

Not every good August meal is in the corridor. Scottsdale's Hilton Village is now home to a third outlet of La Miel de Agave, a modern Mexican restaurant that features aguachile, green chile enchiladas, quesabirria tacos, elote and more, at 6107 N. Scottsdale Rd. After closing in 2025, popular Scottsdale New Mexican restaurant Frank & Lupe's has resurfaced in The Shops Gainey Village. The new owner will continue to use the Bernal family's recipes at 8787 N. Scottsdale Rd. Both are north of the walking rectangle. Both are worth the ten-minute drive on a night the Old Town books are full.

The Second-Order Read For Residents

Watch what closes. The former STK space became Above All Else. The former Buca di Beppo is becoming Drake's. Roach's former cabinetry showroom is becoming Ari & Lloyd. Old Town's summer inventory turn is happening inside existing shells, which is worth remembering the next time a longtime tenant goes quiet on a lease.

That last sentence is the one to hold onto. The corridor is not adding square footage. It is reassigning it, at the top of the market, to national operators bringing flagship formats. That is the kind of shift a resident notices six months before a portal does.

Plan The Month

2. Hold the Aug 6 to 9 window for Wolf by Vanderpump or Cielito, both already past their opening wobble.
